Acquaintanced as the most ancient cereal of the world, the espelta is a variety of wheat cultivated for approximately 7.000 years. Probably this is the reason why it has been considered the origin of all the current varieties of wheat we can see nowadays.
In some zones, it is known as green wheat; in other places it is considered as a wild wheat due to its rustic aspect and intense flavor. In any case, in former Egypt and China, it was used like food and like ingredient to elaborate beer. Spelt contains lots of fibre; it is ideal when constiation, overweight or problems caused by lack of fibre. In addition to silicic acid, spelt provides iron and phosphorus. That way this cereal becomes a very good nourishing source.
It contains more proteins than wheat, including 8 essential amino acids. Its high quantity of tryptophan makes spelt specially positive for our corporal and mental health. This standard amino acid stimulates the production of serotonine. When we take spelt, we are reinforcing the resistance of our organism against infections, colitis or intestine diseases. On the other hand, it increases recovering capacity after physical efforts and improves our sleep.
